Spiced Apple Coco-Chicken Curry
This dish was prepared as an apple-themed entrant for our Cooking Club's Iron Chef week. Vegetarians may omit the chicken.
Ingredients
- 1 stick (1/2 cup) butter
- 1 medium-sized sweet yellow onion, finely chopped
- 1 Red Deliciuos & 2 Granny Smith Apples - peeled, cored, finely chopped
- Salt and pepper to taste
- 1 tablespoon curry powder
- 1/2 tablespoon garam masala powder
- 4 tablespoons flour
- 1 cup coconut milk
- 1 cup milk
- 1 cup chicken broth
- One whole chicken - boiled, baked, broiled, grilled, or roasted - cut into pieces
- 1/2 - 1+ tablespoon Thai or Hunan Style Red Chile Sauce – to desired hotness
- 1/4 cup golden raisins
- Cooked Rice
Directions
- Heat butter in saucepan over medium heat.
- Add onion, salt & pepper to taste, then apple to butter.
- Saute about 10 minutes, on medium-high heat, or until fruit & veggies are tender.
- Sprinkle curry powder and garam masala atop veggies and continue cooking 1 minute.
- Add flour and saute 1 more minute.
- Stir chicken broth, cow milk, and coconut milk.
- Toss in chicken and stir.
- Add chili.
- Stir in golden raisins and simmer on low for 15 minutes.
- Serve hot atop rice.
